School's Out! (Spring '12)

I've been such a bad blogger lately :( but trust me my reasons are good ones, though I cannot tell you just yet. What I can say is that school was just beyond crazy this semester and with the move to the new house the last couple of weeks before finals it didn't help much.

I'm just so glad to be out and be able to enjoy my summer decorating, cooking, reading, spending time with the family and friends, and blogging of course :). You know, the norm.

So, here's to a great summer vacation with lots of exciting things happening!

Cotto vs Mayweather

Everyone knows the love-hate relationship I have with boxing right? Well tonight is the night many boxing fans (not that I'm a fan and all ;)) have been waiting for. The fight between Cotto and Mayweather!

I unfortunately was scheduled to work tonight but luckily will still get the chance to watch the fight. I cannot wait to see how it unfolds, though I have to admit I'm a little nervous. Anything can happen. But I'm staying true to my Cotto no matter what :)

Why is it...

That some people just can't be happy for you. I don't get it. You would think that if someone has a few good things going on in their life those who are "friends and family" would be happy and wish them the best.

What hurts more is when is a family member that just can't share your happiness with you. I feel blessed in so many ways I couldn't even begin to express myself. And when I see good things happening for others I'm right there for them. Wishing them nothing but the best. I don't hate on them. Why should I? Or why should they? Just be darn happy for me/us or keep your opinions for yourself. We don't need your negative opinions or feelings.

Soon we will begin a new chapter in our lives with dome surprises to the public and I only want those who truly care and are happy for us around us. Otherwise, call me whatever you want but you will definitely be out of my circle. Point blank.

On another note, we've started moving things to the new house. Only the bathroom and master bedroom need painting. Cable, Internet, and alarm system will be connected on Friday. And if all goes well we should be all moved in by next Monday :D I seriously cannot wait to post pictures! The hubby and his stepfather did a great job on the house. I am one happy wife :).

Broiled Tilapia Oreganata

This is seriously the best tilapia recipe ever. I don't think I'll ever eat it any other way. Ok maybe I will but this is definitely my favorite.

My favorite side for this are tostones (fried plantains). The hubs on the other hand doesn't eat or like for that matter fried food so he likes it with a vegetable on the side. I don't mind a vegetable either, is healthier and you can change it up.

I found the recipe in SkinnyTaste. I'll list the ingredients and directions below and you can also find the original by following the link.

Ingredients:
1 tbsp finely chopped fresh oregano or 1 tsp dried
4 (5 oz) tilapia fillets
1/2 tsp salt
1/4 tsp fresh pepper
4 tsp olive oil
1 garlic clove, minced
2 tbsp whole wheat seasoned breadcrumbs

Directions:
*Preheat broiler. Line broiling pan with aluminum foil.

*Rinse tilapia. Pat fillets dry with paper towels. Season with salt, pepper and oregano. Add garlic, drizzle with oil and sprinkle bread crumbs on top.

*Arrange fillets in a single layer on the prepared pan. Broil about 8 inches from the heat until the topping is browned. Be careful not to over cook the fish.

*Serve with lime and your favorite vegetables.
